Veggie Cheese Pie
Ingredients
1 9 inch ready-made pie crust
1 c freshly shredded Parmesan cheese (I used grated)
1 c coarsely chopped red onion
1 t garlic salt
1/8 t pepper
1 yellow summer squash, cut into ¼ inch slices
1 zucchini, cut into ¼ inch slices
2 tomatoes thinly sliced (I used roma tomatoes)
1 4 oz package crumbled feta cheese

Preparation
Heat oven to 425. Put pie crust in pie pan. Sprinkle crust w/ ½ c of the Parmesan cheese; sprinkle chopped onion on top of cheese. Sprinkle with garlic salt and pepper. Layer pie crust with yellow squash, zucchini, and tomato slices. Sprinkle with remaining Parmesan cheese. Sprinkle with feta cheese. Sprinkle with basil. Bake 25 min. Let stand 10 min.
