Salmon with Mustard and Dill

Ingredients

1 T minced fresh dill
1 T fresh lemon juice
3 T sweet-hot mustard (I used Grey Poupon)
1/2 t salt
1 (1 1/2 lb) salmon filet

Preparation

Combine dill, juice, and mustard, stirring well. Place salmon, skin side down, in a shallow baking dish (I usually put it on foil to help with clean-up). Sprinkle with salt. Brush mustard mixture over salmon. Cover and refrigerate 20 minutes. Bake at 425 for approximately 20 minutes (or until salmon is flakey and done as you like it). You can also grill the salmon.
