Parmesan Dijon Chicken
Ingredients
Dry bread crumbs at room temp for several hours (I skipped this step). Combine bread crumbs, parmesan cheese, parsley, & garlic. In shallow pan, combine mustard & wine. Dip chicken pieces in mustard mixture; roll in crumb mixture to coat. Arrange in 9x13 in glass baking dish. Refrigerate, covered, up to 8 hours (I did about 16 hours). Heat oven to 350. Drizzle with melted butter. Bake, uncovered, until chicken is tender and juices run clear (50 to 60 min).
